Good Food / Bad Food
Ever wonder what makes a food “good” or “bad?” How much does a given nutrient or degree of processing “matter”?
Depending on where you get your information, you’ve likely been told all kinds of foods are good or bad – but are they really and how do you know?
Top request I get when writing articles and doing presentations is to share the secret to food. To give everyone an algorithm of what’s “good” and what’s “bad” whether they’re at a restaurant, Christmas, or vending machine.
The request is problematic in many ways –
#1 = All food has value – sometimes it’s for the physical body and sometimes the emotional self.
But value is value.
and
#2 – Me labeling it “good” or “bad” doesn’t change your decision – it just makes you feel good (or bad).
So what’s the point in the label?
How do we figure it out?
The way to figure out food's physical value is to understand food chemistry. Chemistry is complex and it's the foundation for all things food. It's what our body “sees” when we eat.
Let’s look at a banana for example. When we eat a banana, our body has no idea that we ate a fruit.
Our body doesn’t “gasp” with terror at how “bad” it is or relish with delight at how “good” it is. It sees a series of complex chemistries to provide vitamins and minerals as well as energy in the form of various sugars. But it doesn't care (or know) if it got those chemistries from a banana or some brown sugar and squash.
But we as a society have created hierarchies. We have deemed the glucose from a banana superior to the glucose we get from table sugar. But is one "better" than the other?
A Parallel Example
Let’s look at another, more familiar example - money. When you look at a stack of coins and bills, what do you see? Perhaps pennies, nickels, quarters, singles, fives, twenties etc. But at a basic level - what is it? Metal and paper. The only reason those metals and papers have varying values is because we as a society decided it was so. But in reality, very little separates a dollar bill from a hundred dollar bill. They’re made of the same material and are the same size. But we deemed that one with Ben Franklin on it is 100x more valuable than one with George Washington. But put a match to either, and they will burn the same.
The same notion is true in food. Whether the glucose comes from table sugar, an apple, a banana, or candy - the body doesn’t care. Glucose, is glucose, is glucose - regardless of where it comes from.
So are all foods "equal?"
We have to be realistic about what’s in front of us, what we enjoy, and what we are willing / capable to maintain. There are times I might recommend someone get their energy from juice rather than fruit (for example) related to factors like convenience, diminished appetite, and/or the need for rapid energy unimpeded by complicated chemistries. There are times I love cheetos for the salt and crunch! But like with my patients, I’m thoughtful to make sure we get missing nutrients over time from other foods (eg, vitamins, minerals, fiber).
Similar to the money example, you can pay a $100 electrical bill a lot of different ways – 1 crisp bill or 5 twenties or 100,000 pennies or 100 singles and everything in between (let’s not even get into checks, credit, and electronic payments – yikes). There are actually 293 ways to make change for $1…I refuse to do the math for $100.
The point is, you pay the $100 electric bill based on what you have available as well as how big your wallet, purse, or suitcase is. The $100 is not more valuable based on how you got there. But at the end of the day, you’re still at $100, and that’s what the electric company cares about.
